Chocolate Energy Bars With Peanut Butter

As a morning pre-workout snack or an afternoon pick-me-up, these three-ingredient, indulgent peanut butter chocolate energy bars are sure to satisfy your sweet tooth whilst providing essential nutrients.

Chocolate Energy Bars

Ingredients

    • 1 cup peanut butter
    • 1&1/2 cups pitted dried dates, preferably Medjool
    • 1 cup dark chocolate, divided

Directions

Prep:

1. Grease an 8×8 square cake pan.
2. Roughly chop chocolate.
 

Make:

1. Combine peanut butter and dates in a food processor and blend until well combined.
2. Add half the chocolate and pulse a couple of times until chocolate chunks are mixed in.
3. Spread into prepared pan.
4. Melt remaining chocolate in the microwave in 15-second increments, stirring in between.
5. Spread melted chocolate over bars and refrigerate until chocolate is set (about an hour). Enjoy!
